Recipe: Gingerbread

Gingerbread was a classic holiday dessert at our house growing up. And it just happens to be the easiest thing in the world to make. Seriously, all you do is mix all the ingredients together, pour into a greased pan, and bake. The result is a thick, brown cake of ginger-y goodness. Served best warm with whipped cream!
What you need:

2 1/3 cups all-purpose flour
1/3 cup sugar

1/2 cup shortening

1 cup molasses
1 egg
3/4 cup hot water
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
3/4 teaspoon salt

What you do:

Heat oven to 325ºF. Grease and flour bottom and sides of square pan {9×9 inches}.
Beat all ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 3 minutes, scraping bowl occasionally. Pour into pan.
Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Makes nine servings.

    Huge success at the potluck and the whipped cream was a perfect addition – i actually made peppermint fresh whipped cream and WOAH = amazing!
